spicy carbonara

Ingredients:

-3 tablespoons of cornstarch

-1 cup of water

-1 cup finely grated parmesan

-3/4 tablespoon of chili powder

-1 tablespoon of hot sauce

-1 tablespoon of olive oil

-1/4 of a lemon

-4 egg yolks

-1/4 of a lemon’s juice

-3 garlic cloves (grated)

-1/4 cup of diced cured pork

-salt and pepper to taste

-any pasta lol

directions:

mix cornstarch and water in pot lightly simmer and whisk till corn syrup-like consistency. toast chili powder and black pepper on a pan till aromatic. Add above ingredients with parmesan, chili powder, hot sauce, olive oil, lemon juice, black pepper, salt and egg yolks to a blender till smooth. transfer to storage container for later use, this is the spicy carbonara sauce by itself.

begin boiling pasta till al dente or about 15 minutes. while boiling use a separate pan to render pork fat and lightly fry garlic. move this to a separate bowl for toppings. in the pan with pork fat add 3 spoonful of the carbonara sauce per mouth. let simmer for 3 minutes then remove heat and add pasta. after mixing transfer to serving bowl and sprinkle black pepper and the pork/garlic toppings. enjoy <3

sicilian deep dish

Ingredients:

-250g all-purpose flour

-instant yeast packet

-150g of water

-hella olive oil

-2 cups of generic pizza sauce

-2 Roma tomatos (any is fine)

-2 garlic cloves

-1/4th white or yellow onion

-1tbsp of butter

-block of mozzarella

-rosemary

-basil

-salt and chili flakes

directions:

in a large bowl add warm water and yeast packet, mix, and let sit for 10 minutes. once activated add flour and a pinch of salt to the bowl. mix until sticky consistency then cover with a warm damp towel. let sit for 20 minutes and preheat oven to 425.

prepare the sauce by peeling the skin off tomatoes, lightly crushing garlic, and peeling the onion. lightly roast in a pot with olive oil. once cooked add generic pizza sauce, a knob of butter, and a pinch of salt/basil/chili flakes. mix and mash until desired consistency.

once the bread has risen lay it onto an oil-covered rimmed baking TRAY. SPREAD AND POKE WITH FINGERS TO CORNERS TO GIVE a BUBBLY TEXTURE. drizzle the top of the pizza with olive oil, salt & rosemary. let sit for 10 minutes in the pan. pre-cook pizza in the oven for 15 minutes then remove to add the cheese first and the sauce on top. drizzle olive oil evenly on top then throw it back into the oven for 5 more minutes. take out and eat my sweetheart
