directions:
on a cutting board trim the excess fat off the steak (save this) then season heavily with salt on both sides. leave out for minimum 20 mins.
in the meantime prepare each of the fresh ingredients into separate bowls. rinse and chop green onions diagonally then place into water filled bowl. rinse and remove stem from cabbage then chop into inch sized squares. strain sweet corn and place into bowl. peel garlic clove then slice into thin discs. for the sauce put the corn starch into a bowl with a splash of water then mix. after mixing add the soy sauce, oyster sauce, honey and sesame oil.
on a large pan, turn the heat to med-low and place only the steak trimmings to render the fat out. remove trimmings and shallow fry garlic for 2 min then remove. place the steak the pan for 5 min on each side. once cooked, remove and let rest for 5 min then slice against the grain. with the empty pan on medium, place the bowl of rice, corn, cabbage into a corner on the pan. pour the sauce evenly then after 3 min place the steak above the rice. sprinkle the green onions and fried garlic then crank a metric shit ton of black pepper over the pan.
